Parmesan and Rosemary Crackers

Having drinks in a party is not enough you get to have some lovely snacks or canapes if that is what you want to call them. I have the exact hearty snack that is perfect for Christmas. A Parmesan and Rosemary Cracker, it is cheesy and flavourful, and it is perfect for consumption at any time of the day. I love to crave snacks all the time and this is what i want from time to time. :P This recipe can be adapted and use cheddar and thyme instead


Parmesan and Rosemary Crackers:
  • 115g unsalted butter
  • 115g parmesan
  • 1 teaspoon of rosemary
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 145g all-purpose flour
1. With an electric mixer cream the butter for 1 minute
2. With the mixer at a low speed add in grated parmesan, rosemary, salt, pepper and mix it well
3. Add the flour in and combine it until the mixture is in large crumbles for about 1 minute (If it is too dry add in a teaspoon of water)
4. Flour your work surface and put the dough on top and press it into a ball and roll it out to have a 9 inch diameter long cylindrical shape
5. Refrigerate it for at least 30 minutes or up to 4 days
6. Preheat the oven to 180°C
7. Take your dough out of the fridge and cut the cylindrical dough with a sharp knife into having a 0.5 inch thickness
8. Line your baking tray with a parchment paper and bake for 22 minutes until it is very lightly browned
9. Rotate your baking tray at least once during baking.
10. Take the crackers out of the oven and cool it down and serve it a room temperature.
