1. Preheat the oven to 180°C and line the bottom and the sides of a 8 inch baking tin with some parchment paper

2. Beat the 90g of butter up until it is smooth and creamy and then added in the 100g of granulated sugar and continue beating it until it is creamed. 

3. Mix in the 2 large eggs and add in the vanilla extract and then mix it well until it is fully combined. After it is combined, add in the 350g of nutella and seasalt into the mixture and incorporate the mixture together until it is smooth and fluffy.

4. Slowly add in the 95g of all-purpose flour into the mixture. Fold the flour into the mixture, this adds air into the mixture making the cake more fluffy. Do not over-mix, otherwise air would be lost from the batter.

5. Pour in the batter into the pre-prepare tin and even out the mixture.. Bake the brownies for 30 minutes and keep an eye on them to see if they are done by using a toothpick to test the middle. If there are no crumbs stuck to the toothpick, the cake is done.

Berry Coulis:

• A handful of your favourite berries
• 4 tablespoons of water
• 2 tablespoons of sugar

2. Heat up the pan and add in 4 tablespoons of water and add in the chopped up berries. Use a wooden spoon and break up the berries whilst it is in the pan

3. Add in the 2 tablespoons of sugar into the berries, if it is not sweet enough, add more sugar.

4. Leave the mixture aside and if you want blend the berries mixture together.

After baking the brownies in the oven, leave it to cool for awhile. To serve the brownies, cut a slice of brownie and top it up with more nutella on top, add in a few more berries and scoop up your favourite ice-cream and pour warm delicious berry courlis on top to finalise a wonderful dessert for a relaxing evening.

This recipe is great for an sudden craven, or a special evening treat as the preparation time and baking time is under an hour. I finished everything by 1a.m. even though I start making the cake at midnight and I manage to surprise my friends that we've got a special treat that night despite me telling them that the desserts we order were not arriving. 

After celebrating 2016 New Year with my friends and family back home in Macau, I went back to Lyon in France to finish my study in year abroad. Before I went to Lyon in September 2015 I thought that this was going to be a great adventure, meeting and trying new things. Just before I landed in Lyon, I started to cry as I contemplate that this is going to be a big mistake and the new environment and surrounding would horrify me. I just want to go home or back to Nottingham to be with my friends and family, but I said no because it's been something I wanted to do for a long time and I'm not going to back out.

Going back to Lyon for the new year I want to start fresh, I continue with my work in the college, it was difficult to communicate with my peers due to the language barriers, but I worked hard and make sure I contribute as much as possible. I made new friends, some international and some local ones (shoutout to Aleksandra, Jochen, Arisa, Lucy and Alexandre etc...) Some say that living alone is amazing with the freedom that comes with you have but I found that very boring. After living 10 months in an ensuite room that looks like a prison cell by myself, I'm happy to say that I prefer sharing a house with a couple of friends even though I'm more of an introvert person, I just prefer a more lively atmosphere. I manage to spend some time with my friends to travel around France: Nice, Marseille, Paris, Avignon and Aix-en-Provence and created some fantastic memories. The South of France is a beautiful place and it's it definitely worth travelling to.

I managed to achieve one of my goal this year by going to see a Grand Slam tournament. The Roland Garros was amazing with the beautiful red clay, (I always thought that I would go see Wimbledon first) I managed to get a glimpse of the Williams sisters, Martina Hingis, Fernando Verdasco and so much more... It was an experience that will always stays in my heart.

The highlight of 2016 would probably be my 4 weeks nutrition internship in Fiji following by a week travelling in Brisbane and Sydney, since I had some friends that live there. It was the first time for me to travel to the Southern Hemisphere of the world and I've been dying to go to Australia. The internship was an eye opening experience, My job was to go around schools and village and give them talk on healthy eating and lifestyle and I feel like I've managed to change their opinion and educate their why it is important to be healthy in their daily lifestyle. This trip made me feel privilege of what I have in my life and that there are family and friends that love and support me, this motivates me to persuade a career in health so that I can help and motivate other people in life.

During the fall of 2016, I return to the University of Nottingham to continue my studies, this year it is relatively important for me as it is my final year. It was a bit sad that see that lot of my friends has already graduated so it kind of felt a little bit lonely and it made me realize that everyone has grown up now and they are doing masters or finding a job and I should really enjoy the rest of the time that I have in university. I've became the president of badminton society which was really exciting, working with a group of people and managing the finance of the society and planning tournament and social events for our members. Finally, I have also join blog society in Nottingham an I met a bunch of cool people and finally started a blog and hopefully I can continue on working on my blog and hopefully expanding it to other social medias like Instagram and Youtube! Wish me luck and hope everyone have an amazing 2017! :D

Parmesan and Rosemary Crackers

Having drinks in a party is not enough you get to have some lovely snacks or canapes if that is what you want to call them. I have the exact hearty snack that is perfect for Christmas. A Parmesan and Rosemary Cracker, it is cheesy and flavourful, and it is perfect for consumption at any time of the day. I love to crave snacks all the time and this is what i want from time to time. :P This recipe can be adapted and use cheddar and thyme instead

Parmesan and Rosemary Crackers:

1. With an electric mixer cream the butter for 1 minute

2. With the mixer at a low speed add in grated parmesan, rosemary, salt, pepper and mix it well

3. Add the flour in and combine it until the mixture is in large crumbles for about 1 minute (If it is too dry add in a teaspoon of water)

4. Flour your work surface and put the dough on top and press it into a ball and roll it out to have a 9 inch diameter long cylindrical shape

5. Refrigerate it for at least 30 minutes or up to 4 days

6. Preheat the oven to 180°C

7. Take your dough out of the fridge and cut the cylindrical dough with a sharp knife into having a 0.5 inch thickness

8. Line your baking tray with a parchment paper and bake for 22 minutes until it is very lightly browned

9. Rotate your baking tray at least once during baking.

10. Take the crackers out of the oven and cool it down and serve it a room temperature.

1. Fill the glasses up to 1/3 or 1/2 with Prosecco

2. Add a dash of absolut's strawberry or raspberry vodka

3. Top up the remaining glass with lemonade

4. Add a few drops of the strawberry liqueur into the drink to give it a more strawberry flavour.

5. Drop a slice of strawberry and lemon into the mixer.

6. Skewer the strawberries and blueberries together and put it into the drink to decorate this magnificent Seccoberry

7. Add some crushed ice into the drink to make it even more refreshing.

There were free food and drinks which was always lovely, and the pizza was delicious. For me the best part of the event was the photo booth section, it was a great opportunity to take silly photos with a large group of friends and use some funny props.

Blog soc is also giving out some wonderful gifts to some lucky members. These include 2 bags of Roasting House coffee powder, a box of Cadbury's chocolate and some Soap & Glory make-up brand. (Finger's cross for the bags of coffee, hehe :D) Overall it was a lovely chill our event to meet people before the weekend! 

My mum is an amazing chef, one of the best in my opinion. I always see her reading cookbooks and finding recipes online and adapt them to put the food on our plates taste better. One of the best things that she makes are the cakes, she always spends her time to make the cake perfect with her creative designs. On her facebook account there are over 1500 recipes of food that she had made over the years and over 100 different spectacular cake designs.

As a student living away from home, it is always hard to find time to cook delicious food and whenever I cook it always doesn't match my mum's standard 　, (P.S. it's hard to cook in my messy kitchen, dam you my messy friends!! 　). Since I'm living with a vegan and I have time during the weekend, I decide to be nice and make something delicious for a treat, hehe!!

Chocolate Avocado Vegan Cake

• 540g of plain flour
• 6 tablespoons of cocoa powder
• 1/2 teaspoon of salt
• 2 teaspoons of baking powder
• 2 teaspoons of baking soda
• 360g of granulated sugar

• 45ml of olive oil
• 1 avocado
• 360ml of water
• 2 tablespoons of white wine vinegar
• 2 teaspoons of vanilla extract
