University of Nottingham Blog Society had their first social last Friday, it was a great opportunity to meet people with the same interest and talk about their blogging experience. As a relatively new blogger it was amazing to receive blogging tips from others that are more experienced and it gives me motivation and more skills to write a blog post.
There were free food and drinks which was always lovely, and the pizza was delicious. For me the best part of the event was the photo booth section, it was a great opportunity to take silly photos with a large group of friends and use some funny props.
Blog soc is also giving out some wonderful gifts to some lucky members. These include 2 bags of Roasting House coffee powder, a box of Cadbury's chocolate and some Soap & Glory make-up brand. (Finger's cross for the bags of coffee, hehe :D) Overall it was a lovely chill our event to meet people before the weekend!
My mum is an amazing chef, one of the best in my opinion. I always see her reading cookbooks and finding recipes online and adapt them to put the food on our plates taste better. One of the best things that she makes are the cakes, she always spends her time to make the cake perfect with her creative designs. On her facebook account there are over 1500 recipes of food that she had made over the years and over 100 different spectacular cake designs.
As a student living away from home, it is always hard to find time to cook delicious food and whenever I cook it always doesn't match my mum's standard , (P.S. it's hard to cook in my messy kitchen, dam you my messy friends!! ). Since I'm living with a vegan and I have time during the weekend, I decide to be nice and make something delicious for a treat, hehe!!

Chocolate Avocado Vegan Cake
Chocolate Avocado Vegan Cake
- 540g of plain flour
- 6 tablespoons of cocoa powder
- 1/2 teaspoon of salt
- 2 teaspoons of baking powder
- 2 teaspoons of baking soda
- 360g of granulated sugar
- 45ml of olive oil
- 1 avocado
- 360ml of water
- 2 tablespoons of white wine vinegar
- 2 teaspoons of vanilla extract
Avocado Icing
- 2 avocados
- 2 teaspoons of lemon juice
- 400g of icing sugar
- 1/2 teaspoon of icing sugar
Preheat the oven to 180°C
- Sift all of the flour, cocoa powder, salt, baking powder and the baking soda all together and leave it aside in 1 bowl
- Blend the avocado until there are no lumps, and mix it with the olive oil, water, white wine vinegar and vanilla extract in another bowl until it is smooth
- Add the sugar to the avocado wet mix and stir
- Now slowly pour the wet mix into the dry ingredients and whisk it until it is smooth
- Grease an 8 inch cake tin with olive oil to prevent the cake to stick, slowly pour the cake mix into the cake tin and bake it for 45-50 minutes
- The cake is done when you put a toothpick/chopstick through the cake and it comes out clean
- Let the cake cool down before you add the avocado icing
- For the avocado icing blend both of the avocados with lemon juice until it is smooth
- Add the icing sugar a little by little to the blended avocado
- Finally once the cake has cool add the avocado icing to the chocolate cake and enjoy
